近段时间，福州的餐饮界有一个特别流行的词，叫做“轻食主义”，在福州也陆陆续续开了好几家以“轻食”为理念的健康餐饮店。这些特别的轻食餐厅在福州的吃货圈迅速蔓延，所提倡的健康饮食也在饮食业造成不小的影响。
什么是轻食主义?
“轻食”是指少油、少盐、少糖、高纤维及高钙，不给身体造成负担的饮食方法。果腹、止饥、分量不多，可说是“轻食”奉行的准则。“轻食”注重健康概念，崇尚清淡、均衡、自然、健康、无负担的饮食，提倡吃七八分饱，远离刺激性食物，少用调味料，多用一些天然食材。轻食的另一个涵义则是指简易、不用花太多时间就能吃饱的食物。轻食主义强调的是简单、适量、健康和均衡。
真正的轻食其实更加强调营养素和食材的多样性，主食要以谷类和粗粮为主；多吃蔬菜水果；经常吃奶类、豆类和适量的鱼、禽、蛋、瘦肉等，并在此基础上对脂肪和食盐的摄入进一步加以控制，这样才是真正做到了轻食。如果没有“平衡膳食”这个前提，那么“清淡”就失去了意义，尤其对于25岁之前的女孩子来说，单一、过分的清淡会对身体健康和性发育产生负面影响，所以千万别把轻食的“轻”简单的理解成清淡的“清”哟!
轻食主义正当红
最近在各大福州美食排行榜以及福州美食推荐表里多了几家新店，这些主打“轻食”理念的餐厅成为许多人津津乐道的话题。正所谓“三月不减肥，四月徒伤悲”，在夏天到来之前，能清一清自己备受压力的肠胃，让人没有负担地大快朵颐应该是许多现代人最想要的健康饮食吧。
Alin是一家近期名头很响的轻食餐厅的店主，她告诉记者，虽然才刚开业一个多月，但是每天客流量都非常大，饭点经常要等位，卖的最好的是沙拉和各种蔬果饮品。“在我看来，所谓的健康饮食、轻食主义最重要的就是从原料入手，有机的蔬菜、绿色的食品之类不给肠胃造成负担的食物是最基本的，要保持食物最原始的味道，少放添加剂等都是保证健康饮食的基础。”Alin说之所以“轻食”能够这么红，应该是因为现代人在用餐时越来越注意合理搭配和健康的饮食习惯，吃得好、吃得健康就是要拒绝多余的油，多余的脂肪，多余的食品添加剂，保证食材最开始的味道。
她告诉记者，现在来消费的大多是年轻人，还有不少家长带着带小朋友来。Alin认为，一开始也许大家只是好奇，但是希望越来越多人能接受这种健康的饮食习惯，“虽然有的人认为我们的口味太过清淡，会要求我们做一些改变，我们会尽量配合，但是还是不能脱离最基本的初衷，做到真正的‘轻食’。”
但是轻食主义这么红，还是引来了一些人士的担心。记者从sugo店主那里了解到，他们是福州比较早做这种健康饮食的轻食餐厅店家。在他看来，轻食不能是为了轻食而去推广，这是一个理念，但是不是一样产品，大家关注健康的饮食是好的，但是有些店家利用这个理念，打着轻食的招牌，卖着可乐芝士汉堡。记者也走访了几家主打“健康饮食”的餐厅，确实有部分的商家“挂羊头卖狗肉”，一些高热量的冷鲜速冻产品也在他们的菜单之上。
有多少人愿意花钱“吃草”
福州的“轻食”市场才刚刚启动，不少店家都对这个市场保持乐观的态度，认为潜力无限。Alin告诉记者，之所以会选择做这种类型的餐饮主要是因为自己在国外学的是营养学相关的专业，本身就非常认同这样的饮食习惯，回国之后就想开一家这样的轻食餐厅，希望更多人的人够改变以往一些错误的饮食习惯，走出误区，“当一个人真的习惯了过健康绿色的生活，对于那些不健康的东西他本能就会去拒绝的，这也是我开餐厅想要做到的。”
记者随机采访了在该餐厅用餐的几位顾客，一位在附近上班的女士告诉记者，平时聚会大家都爱吃重油重盐的东西，其实吃的时候挺畅快，可对器官负担很大，自己平时都是坐办公室没有什么运动，现在想要用改变饮食习惯来一步步调整自己的身体。也有当妈妈的顾客强调，因为小孩还小，不放心他吃外面的东西，这些绿色食品又比较健康，很适合他们带小朋友来。但也有顾客认为口味太淡自己完全不能适应，而且价格偏高，感觉还不如自己回家做。也有消费者表示自己是看很多人推荐就来试一试，没有什么特别的感受。
虽然现如今打出“轻食主义”招牌的店家在福建有好几十家，但也的确存在趁着这个热潮来“借东风”的或是为了迎合更多人的口味而做出妥协的商家。或许还是那句话，时间会把好的留下来。“轻食主义’到底是一时的新鲜还是真的形成一种健康的饮食需要，现在下结论还为时尚早。但是，在现在多元化的饮食消费中，这种新的概念餐饮还是值得期待的。
